How to Make the Perfect Pimento Cheese in 10 Minutes

When the leaves turn golden and the air grows slightly chilly, you can always expect a football game on the TV. As an Alabamian and a graduate of Auburn University, football season is an important part of my culture, and I thoroughly enjoy making a variety of foods for any tailgates or watch parties. One of the best and simplest foods I like to make for football season is homemade pimento cheese. It doesn’t get much more southern than that! Here are my five tips for taking pimento cheese to the next level.

1. Use block cheese and grate by hand. Try to stay away from pre-shredded cheese when it comes to creating pimento cheese.

2. Use a combination of sharp and extra sharp cheddar. Sharp cheeses add additional flavor to the pimento cheese.

3. Grate the cheeses into two sizes. Using a box grater, grate half of your cheese into larger pieces and the other half into finer pieces.

4. Utilize high-quality cheeses. Cracker Barrel, Cabot, and Tillamook are great options that I personally enjoy.

5. Use good mayo. Duke’s Real Mayonnaise is close to homemade and my personal preference for pimento cheese.

Here is my perfect pimento cheese recipe.

Ingredients

1 (8 oz) block sharp cheddar cheese
1 (8 oz) block extra sharp cheddar cheese
1 1/2 cups mayonnaise
1 (4 oz) jar pimientos, (do not drain)
1 tbsp Worcestershire sauce
1 tsp finely diced onion
1/2 tsp red (cayenne) pepper
1 tbsp diced pickled jalapeños, (optional)

Instructions. In a large bowl, stir together mayonnaise, diced pimientos, Worcestershire sauce, grated onion, and red pepper flakes until blended. Grate cheddar cheeses using two sides of a box grater so that half is largely grated and the rest is more finely grated. Stir the mayonnaise mixture into the cheese. Refrigerate for at least 12 hours and enjoy!

The “redneck” way to serve pimento cheese. I love to serve pimento cheese as part of my Alabama-style “redneck” charcuterie board. Redneck charcuterie includes saltine crackers, smoked sausages, tamed jalapeños, and your choice of pickles. To make it Alabama-style, I use small Conecuh sausages and Wickles Pickles. Many followers of Jesus struggle with prayer and where to begin when teaching our kids. Often, we think of prayer as being formal and churchy and struggle to craft the eloquent prayers that we heard in church. It is hard for us to wrap our minds around having a conversation with an unseen God. We feel guilt that we don’t pray enough, yet we often don’t know where to begin. Our personal struggles with prayer lead us to not know where to even begin when it comes to teaching our kids to pray. In Luke’s gospel, the disciples ask Jesus how to pray (Luke 11:1). Jesus gave them what we have come to know as the Lord’s Prayer: “Father, hallowed be your name. Your kingdom come. Give us each day our daily bread, and forgive us our sins, for we ourselves forgive everyone who is indebted to us. And lead us not into temptation” (Luke 11:2b-4 ESV). From this model of prayer, we see several priorities to shape our prayers and teach our kids how to pray.

Lift God’s Name High. Prayer begins with God. He is our Father who has a great name that is worthy of praise. Prayer begins by lifting His name high.

Remember God’s Kingdom. The kingdom of God is at hand, and He is at work in and around us. Prayer reminds us that there is a greater kingdom and takes our hearts and minds from our kingdoms to His.

Share Your Personal and Spiritual Needs. What are your daily needs? God cares about our physical needs and seeks to provide for us. We are invited to live each day depending on His resources instead of simply relying on our own. Prayer then moves from physical needs to spiritual needs. We seek God’s forgiveness when we fail to follow Him and allow Him to change us to look more like Him.

Ask for God’s Presence and Protection. The prayer ends with a reminder that we need God to protect and guide us in a world that opposes us. He will be with us and protect us as we walk with Him.

Prayer is an invitation for dependence on God and a reminder of how much we need Him. The Lord’s Prayer becomes a tool to help us to teach our kids how to pray as we learn to depend on God ourselves through prayer.

Thirty years ago, I arrived at Big Oak Boys’ Ranch. I remember my very first week in the Osborne’s home, playing with baseball cards in my room. Another eight-year-old boy walked into the room and began to ask me questions – who are you, what do you like to do, why did you come to Big Oak Ranch? I answered by telling him that my dad was a famous baseball player, and that is why he couldn’t take care of me. He returned with, “Oh yeah? What team does he play for?” I frantically scrambled through my baseball cards and landed on one in particular, exclaiming, “Here he is!” Weeks later, I discovered that the boy I was talking to was Brodie Croyle.

There are millions of reasons for why we all come to Big Oak Ranch. In truth, I came to Big Oak because I was abandoned. At five or six years old, I sat at the top of the stairs and watched my father and mother fight over my siblings and me, as if it were the NFL draft. After their divorce, it didn’t take long before my father flipped through a phonebook and dialed random numbers, searching for anyone to care for his children. Bouncing from one place to another became the norm, and I learned that I was an unwanted child. By age eight, I was so angry with God and consumed by questions of, “Why would God allow this to happen to me? Why am I unwanted?” Soon after, I was dropped off for the very last time – at a place called Big Oak Ranch. My first set of houseparents were the Osbornes, as they became the first people who invested in building the foundation of the man I am today. After days, weeks and months of their love and discipline, I learned many moral and character values that I still hold today – values of humility, integrity, accountability and loyalty. As the Osbornes transitioned to serve at Westbrook and the Girls’ Ranch, I received Mom and Pop Gilbert as my houseparents, and through them I experienced a compassion, love and devotedness that changed my life.

My houseparents sacrificed so much for us, specifically through their unconditional love, and their sacrifice – it marked me. It guides me as I serve our country. After graduating high school, I felt that serving in the military was my path. After talking with several recruiters, I was convinced that the Air Force was for me, especially after finding out that I could be the one to load fighter jets, ensuring they are up correctly and safely. At 20 years old, I joined the Air Force and I have continued to serve for the past 18 years. Being able to serve a greater purpose is something I wouldn’t trade for the world.

We all agree that our society is in a state of crisis. What we do not agree on involves two questions. Why we are in such awful state? How do we change things? Perhaps the scriptures can be helpful with answers to both questions. When ancient Israel and Judah were asking the same two questions, the prophets offered the following message. Israel is in an awful state because the people of God are in a spiritual crisis. The national crisis will be over only when the people of God repent.

Maybe we need a prophetic voice for the church of this generation. Maybe we need Russell Moore. He is a conservative theologian and an ordained minister. Will we come home? The choice belongs to us.

While it has been said that familiarity breeds contempt, sometimes familiarity breeds complacency. Does your marriage feel like it is on autopilot, and no one is watching the flight control system? Marriage can be smooth until the turbulent winds of life come. Here are three strategies to keep your marriage flying safely through the inescapable bumpy times.

1. Keep Dreaming. Do you remember the early days of your relationship when you were carefree and full of dreams and possibilities? Maybe you imagined traveling, starting a business, or having a house and three children. When left unattended, a marriage can slowly drift into complacency. Before long, the couple loses their sense of adventure and relational curiosity. The desire to know each other better fades. This scenario does not have to be your reality. With godly contentment as your guiding principle (Philippians 4:11), work to strengthen your marital bond. Travel to the mountains or beach and discuss the next chapter of your marriage. Dream big together. Put a date on it. Implement it.

2. Keep Depending. Whether you have been married fifty years or fifty days, you need each other. God designed it that way. Genesis 2:18 says, “Then the Lord God said, ‘It is not good that the man should be alone; I will make him a helper fit for him.’” In a biblical marriage, God joins a man and a woman who are custom fit for each other. Like inhaling and exhaling, their oneness is inevitable. The Bible declares, “…they shall become one” (Genesis 2:24b). In what ways can your strengths benefit your spouse’s weaknesses? Celebrate your dependence upon each other, knowing “two are better than one” (Ecclesiastes 4:9).

3. Keep Romancing. Romance is more than sexual intimacy. In his book Love Is Something You Do, John Bisagno writes, “Real love goes far deeper than movie-land romances and teenage crushes. It gives, it bleeds, it hurts, it sacrifices, it cares, it dies.” Did you know, at your wedding, you promised God you would faithfully practice His brand of romantic love? God’s love pursues when it wants to retreat, forgives when it wants to get even, and embraces when it wants to release.

Remember to dream, depend, romance each other, and never take each other for granted. Keep your eyes on the controls, and your marriage will soar!

If you have teenagers who may be starting to work at part-time jobs, now may be a great time to introduce them to investing — and one place to begin might be a Roth IRA.

What is a Roth IRA? A Roth IRA is a popular retirement savings vehicle. Its earnings can grow federally tax-free, provided withdrawals aren’t taken until the investor is at least 59½ and has had the account for five or more years. But because a Roth IRA is funded with after-tax dollars, contributions can be withdrawn at any time, penalty-free, to pay for any expenses including college. Roth IRA earnings can also be used to help pay for college, although these withdrawals will be taxable. However, if a child is the account owner, a lower tax bracket will likely apply.

In 2023, up to $6,500 per year can go into your teenager’s Roth IRA, as long as the amount contributed doesn’t exceed the amount of their taxable compensation for the year. And your child doesn’t have to put all the money in. You and the child’s grandparents can also contribute. In fact, you might want to “match” your child’s contributions up to the limit to provide an incentive for them to continue investing in the Roth IRA. Not only will your matching contribution help build the Roth IRA’s assets, but it can also instill in your child’s mind the benefit of earning a match – which can prove valuable later on when your child is in the workforce full time and has a chance to receive an employer’s matching contributions in a 401(k) or similar plan.

If you have a family business, you can employ your teen to provide income that can go into a Roth IRA. Furthermore, if the business is one parent’s sole proprietorship, or it’s a partnership in which each partner is the parent, the payments for a child younger than 18 are not subject to Social Security and Medicare taxes. As an employee, your child must perform reasonable tasks necessary for the business and be paid reasonable wages — that is, wages comparable to what you’d pay a regular employee for the same work. But wherever your child’s wages come from, using some of them to help fund a Roth IRA can be a good move. Once your teen’s first paychecks start coming in, consider bringing up the idea of opening a Roth IRA. You may well be opening the door to a lifetime of consistent and informed investing.

Celebrate the Family Expo

During the Celebrate the Family Expo on September 16, 2023, attendees met feathered friends from the Alabama Wildlife Center (AWC)!

AWC is Alabama’s oldest and largest rehabilitation center. For over 45 years, the center has been dedicated to protecting Alabama’s native wild birds. The nonprofit organization has a dual mission of providing medical and rehabilitative care for Alabama’s injured and orphaned native birds and educating people to heighten awareness and appreciation of Alabama’s native wildlife. AWC provides a variety of services such as a wildlife helpline, educational programs, and a rehabilitation clinic.

AWC is open year-round and welcomes tours. The center is a self-guided tour and comes with free admission upon entry into Oak Mountain State Park. AWC is home to more than 14 educational birds of prey at the main facility along with six species of owls, hawks, and vultures located at Treetop an ADA-friendly elevated boardwalk located a quarter mile hike or less than a 2-minute drive from the Center.

At the main facility, meet Shelby the Bald Eagle, and Atlas the Eurasian Eagle Owl! Have the chance to learn about the various native songbirds and raptors of Alabama from Northern Cardinals to American Robins, Downy Woodpeckers to Chimney Swifts, Red-tailed Hawks to Barn Owls.

Additionally, the main facility has various educational displays and exhibits throughout with informative information. The TV Room features an 85” television with various nature documentaries continuously playing. Additionally, a corner of the TV Room features a Kids Nest where kids can relax and read a variety of children’s books about animals. A quarter mile from the AWC main facility, the Treetop Nature Trail Boardwalk features six enclosures that are detailed with information about each species and their individual stories. Come meet Princess, the albino Turkey Vulture, and Ollie, the Black Vulture and longest resident at AWC.

AWC performs over 500 educational programs each year connecting people to nature and promoting conservation for wildlife and the natural world. The programs are designed to create a greater understanding that each of us is a member of an ecosystem. AWC’s educational mission is focused on building a connection between the people and the wild birds of Alabama and aims to help educate the public on Alabama’s native wild birds and AWC’s role in wildlife conservation. †

The Vapor Thrift Store Donation Truck will be onsite accepting donations including gently used clothes, shoes, household goods, and collectibles. So take a moment between now and the Expo and collect items in your home you no longer need, donate them at the event for a great cause and receive a tax deductible donation receipt.

Gone for Good (a program of United Ability), will be at the Expo from 10 a.m.- 12 p.m. providing free shredding and electronic recycling for all attendees.
