Ingredients

4 slices bacon

8 ounces Andouille or other smoked sausage, sliced

2 to 3 tablespoons vegetable or olive oil 

¼ cup all-purpose flour

1 (16-ounce) package frozen “vegetables for Gumbo”mix, thawed & drained (Onions, okra, tomato, celery, green pepper)

1 (32-ounce) carton chicken broth or stock 

2 teaspoons Creole or Cajun seasoning 

1 tablespoon chopped fresh parsley or 1 teaspoon dried

Salt and pepper, if needed 

Fresh parsley and green onions for garnish

8 ounces rotisserie chicken breast or other cooked chicken
