Ashley Mac’s Squash Casserole

Ingredients

4 pounds squash, sliced

3/4 cup onion, diced

2 cups mayonnaise

2 cups shredded sharp cheddar cheese

4 eggs, beaten

1 teaspoon sugar

1 teaspoon salt (or to taste)

1/2 teaspoon pepper (or to taste)

2 tablespoon butter

1 1/2 cups crushed Ritz crackers

 

Instructions

Preheat oven to 350 degrees. Cook onions and squash in 1/2 inch of water until softened. Remove from pan with slotted spoon, drain any excess water. Mix mayonnaise, cheese, eggs, and sugar in a bowl. Add squash and onions to mayonnaise mixture. Add salt and pepper to taste. Pour into large casserole dish. Melt butter and mix with Ritz crackers. Top casserole with the cracker mixture. Bake for 30 to 40 minutes or until brown and heated through. Before serving, allow casserole to stand for 10 minutes. Serves 8-10.
