Ingredients

1 lb flour

4 oz yeast

1 tsp salt

Lukewarm water or milk

Vegetable oil for frying

Instructions

Dissolve yeast in a deep bowl with lukewarm milk or water. Add a little flower to make a dough. Let it rise in a warm place and add flour and enough lukewarm water to make a batter soft enough to be able to drop from a spoon. Cover bowl and let it stand 4 to 5 hours until it starts to bubble on top. Batter is ready for frying. Use a deep saucepan for frying. Add enough vegetable oil to fill pan half-way, and when steaming hot, drop batter from a teaspoon and fry to a gold color. Be sure to rinse spoon in a small bowl of cold water each time before dipping back into batter. This keeps batter from sticking to spoon. When loukoumades are fried drain them on a paper towel. Arrange them on a platter and sprinkle with honey and cinnamon. Serve hot. Note: For added flavor you may add a stick or two of cinnamon to the vegetable oil.
