Ingredients

1 stick of butter (1/2 cup)

2 cups of sugar

¾ cup of evaporated milk

2 cups or one small jar of your favorite peanut butter

1 Tbsp vanilla

Instructions

First, turn on the stovetop to medium high heat and place your pot on the eye. Add the butter, sugar, and evaporated milk to your pot. Stir these ingredients frequently until they come to a boil. Once boiling, set the timer for 2 minutes. If you overcook it at this point it will become hard like fudge. Stir constantly. Remove from heat and add in your peanut butter and vanilla and stir until combined. If you are icing a 2 layer cake you will need to let the icing cool until the frosting is thick enough that when you raise your spatula out of the pan it sticks and doesn’t run off. This icing goes great on vanilla or chocolate cake and I like to top mine with chocolate ganache and chopped peanut butter cups. Hope you enjoy!
