Ingredients

6-8 pork chops
2 T shortening
1 1/2 tsp salt
1/4 tsp pepper
1 cup uncooked rice
3 1/2 cups chicken broth
1/2 cup bell pepper, diced
1/2 cup onion, diced
1 T Worcestershire
Thyme to taste

Instructions

Brown pork chops in shortening and remove from skillet. Season with salt and pepper. Add rice to drippings and brown, stirring constantly. Add remaining ingredients and pour into a 3-quart casserole dish. Place pork chops on top, cover, and bake at 350 degrees for 1 hour. Yield: 6-8 servings.
