Ingredients

2 cups grated zucchini

4 cups of flour

½ cup cocoa

1 ½ cup granulated sugar

1 teaspoon baking soda

½ teaspoon baking powder

¾ teaspoon salt

1 teaspoon cinnamon

¼ teaspoon nutmeg

1 ½ cups oil

3 large eggs

1 ½ cup cup milk

2 teaspoon vanilla extract

1 cup miniature semi-sweet chocolate chips

Instructions

Heat the oven to 350 °F and grease two 8×4-inch loaf pans. Grate the zucchini, and in a large bowl, combine the flour, cocoa, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.

In another bowl, combine the zucchini with all the remaining ingredients, except the chocolate chips. Stir the zucchini mix into the dry ingredients until just blended, and then stir in the chocolate chips. Pour the batter into the prepared pans. Bake until a toothpick inserted in the center of the bread comes out clean. Cool on the rack for 10 minutes. Remove from pans and cool completely.
