Ingredients

Cake Ingredients:

3 cups carrots, grated

2 cups sugar

2 cups all purpose flour

1 1/4 teaspoon cinnamon

2 teaspoons baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 1/4 cups oil

4 eggs

1 teaspoon vanilla

8 oz crushed pineapple, drained

Frosting Ingredients:

8 oz cream cheese, softened

16 oz powdered sugar

1/2 cup butter, softened

1 teaspoon vanilla

1 cup chopped pecans

Instructions

Cake Instructions:

Combine the first seven ingredients. Beat your eggs, add vanilla and oil, and gradually mix into the dry ingredients. Stir in drained pineapple. Pour batter into three greased and floured cake pans. Bake at 350° for 30 minutes.

Frosting Instructions:

Cream butter, sugar, cream cheese, and vanilla. Stir in pecans. Frost top of cake and in between the layers. Spread the cream cheese frosting between the cake layers and on the top while the cake is still warm. Don’t frost the sides. Enjoy!
