Ingredients

While interviewing Comedian Ellen Skrmetti, we learned she is an excellent cook. This recipe for chocolate tipped butter cookies is from her mother’s cookbook. “I call this book my hymnal,” says Ellen. “So many old recipes….My mother always wanted to do a cookbook but never wanted to make money from her friends and many of the recipes were her friends. One Christmas, my dad paid for the printing of the books for her Christmas and mom donated the money to My Choices Pregnancy Center. It raised over $25,000!” This particular recipe is an Ellen favorite. “It is the easiest butter cookie recipe. It comes together so fast and gives such a great presentation.”

1 c. butter

1/2 c. powdered sugar

1 tsp. vanilla

2 c. plain flour

Instructions

Mix all ingredients. Shape into 2 1/2 x 1/2 inch log. Flatten 3/4 length of cookie with tines of a fork. Bake 12-14 minutes at 350 degrees. Remove from pan and cool. Melt 16 oz. semi-sweet chocolate morsels and 1 T Crisco and dip the plain end of the cookie and then roll in chopped pecans. Let cool.
