Brenda Gantt’s Fried Green Tomatoes OR Fried Okra, Diced Yellow Squash, Diced Zucchini
4 Green Tomatoes
4 Tbsp. Buttermilk
Salt and Pepper
1 ½ Cup Self-Rising Corn Meal
½ Cup All-Purpose Flour
Dice tomatoes into ½ inch squares. Put in a bowl and add buttermilk. Toss until all tomatoes are covered. Add salt, pepper, corn meal and flour. Toss again until all is covered. If pieces are too wet, gradually add a little more meal until tomatoes are covered. Fry in a deep iron skillet that is half full of vegetable oil Check temperature by placing one piece of tomatoes in oil. Fry on medium high heat until brown. Drain on paper towels and eat immediately.
Instead of green tomatoes, also try this recipe with okra, diced yellow squash or diced zucchini.
