Christmas Truffles

Ingredients
1, 1 pound package of peanut butter sandwich cookies or Oreos.
12 ounces cream cheese softened
1 tablespoon confectioner’s sugar
1 teaspoon vanilla
2, 1 pound packages of chocolate flavored candy coating melted
Instructions
Line a rimmed baking sheet with parchment paper, set aside. In the work bowl of a food processor process cookies until finely ground. Add cream cheese, confectioner’s sugar, and vanilla. Process until combined. Roll mixture into one inch balls and place on baking sheet. Freeze 15 minutes. Using 2 forks dip balls in melted chocolate to cover. Place coated balls on prepared sheet and let stand until chocolate sets. Store in refrigerator.
