Christmas Truffles
Ingredients
1, 1 pound package of peanut butter sandwich cookies or Oreos.
12 ounces cream cheese softened
1 tablespoon confectionerā€™s sugar
1 teaspoon vanilla
2, 1 pound packages of chocolate flavored candy coating melted
Instructions
Line a rimmed baking sheet with parchment paper, set aside. In the work bowl of a food processor process cookies until finely ground. Add cream cheese, confectionerā€™s sugar, and vanilla. Process until combined. Roll mixture into one inch balls and place on baking sheet. Freeze 15 minutes. Using 2 forks dip balls in melted chocolate to cover. Place coated balls on prepared sheet and let stand until chocolate sets. Store in refrigerator.
