Ingredients

It’s back-to-school time and families need easy weeknight meals! I’ve been making my Chicken Broccoli Rice Casserole for decades and when my kids were in school, it was on the menu often.

3 cups cooked long grain white rice (Cooked with salt according to package directions)

2 cans cream of chicken soup 

3/4 cup mayonnaise

1/2 cup sour cream

1/2 teaspoon onion or garlic powder

2 cups shredded cheese (Cheddar or Colby jack), divided

2 to 3 cups chopped or shredded cooked chicken (I use rotisserie)

1 (12.6 -ounce) package frozen, thawed and drained broccoli florets

1 cup crushed Ritz crackers (about 1 sleeve)

3 tablespoons melted butter
